Chicken with Lemons:

Ingredients:
1 medium to large chicken
2 medium lemons
salt and pepper

  • Heat the oven to 450 degrees.
  • Wash and clean the chicken well.
  • Make lots of holes in the lemons using a toothpick.
  • Rub the chicken with liberal amounts of salt and pepper including inside the cavity.
  • Place the lemons inside the cavity and tie the legs together so the chicken doesn't split.
  • Place in a cooking dish inside the oven and for about 45 minutes. You don't need any oil, just baste the chicken once in a while in the juices that form in the dish.
  • Pasta with Simple Tomato Sauce

    Ingredients:
    1 pound pasta
    1 medium onion
    1 can whole Italian plum tomatoes, chopped
    5 tablespoons butter

  • Cut the onion in half and peel.
  • Place the chopped tomatoes, onion and butter in a sauce pan over medium heat, uncovered.
  • Season with salt and pepper.
  • Bring to a boil and reduce heat so that the sauce cooks at a slow, steady simmer. Cook for about 45 minutes, stirring occasionally. Cook pasta in lots of salt water and combine with the sauce.
  • Chocolate Mousse

    Ingredients:
    2 cups chilled heavy cream
    4 egg yolks
    3 tablespoons sugar
    1 teaspoon vanilla
    7 oz fine-quality bittersweet chocolate (not unsweetened,0), chopped
  • Place 1.5 cups cream in a chilled bowl with yolks and sugar and vanilla. Whisk until the mixture thickens considerably and stiff peaks form.
  • Melt chocolate in a double broiler or, a metal bowl or small sauce pan over a pan of boiling water. Turn off heat and add the remaining half cup of cream to the melted chocolate.
  • Slowly fold chocolate mixture into the cream. Place the mousse in 6 individual serving cups and chill for at least 7 hours.
